An important element of Sam's work is uncovering food stories that are often untold, and the process by which Lisbon’s Cape Verdean community make a fermented sugar cane drink called Grogue is exactly that.

A rum style spirit made from fermenting sugar cane, it's an important taste of home for Cape Verdeans. Sam's images transcribe the journey from meeting the farmers growing sugar cane off busy Lisbon highways, to the local restaurants serving the drink alongside Cachupa and other Cape Verdean fare. His lens meets people warmly, as they are, producing food that is as equally unfrivolous.
